Launch iTunes on the computer and go to Preferences>Devices - select the iPad backup and delete it. Quit iTunes, connect your iPad, start iTunes again and see if you can backup now.

Hi I had the same problem, I tried deleting all back ups and then restored and tried to sync and my ipad is stuck in on starting sync.
Anyother ideas, I appreciate any suggestions specially from a Steeler fan.
Another thing you could try is to backup manually. When your iPad is connected to the computer and iTunes is running, right click on your iPads name on the left side of the iTunes window under the devices heading and select backup. If it stalls that way, you probably have a corrupt app or corrupt data hanging the backup. But try that first. If it completes the backup, eject your iPad, quit iTunes, restart your iPad reboot the computer and try to sync again. Don't restore yet.
To restart the iPad, hold down on the sleep button until the red slider appears and then slide to shut down. Hold the sleep button until the Apple logo appears to power up.

i've just now encountered the same problem.
i've tried deleting the old backup. no go.
i've tried deleting all the apps i've installed since the last backup. no go.
i've tried hard resetting the ipad 2. no go.
i've reset all setting on the ipad. no go.
i tried backing it up on another mac, same error.
i tried manually backing up as Demo suggested, same error.
any other suggestions before i restore to factory settings? i can't restore from last backup, since i now don't have a backup.
I can't think of anything else to try - other than to quit iTunes and restart your Mac. If you tried backing up to another Mac - I really don't think that is going to work anyway.
