Can anyone tell me what version of Safari the iPad 2 is running?

It's not the same software as on your computer. It's a iPad version of Safari.

As stated its not the same software and you can't update it to another version if you wanted to do so nor can you delete it or download it again.

While Safari has been updated with iOS updates, Apple does not release version numbers for their pre-installed apps.

Is there a reason you need to know? If you explained why you are looking for this, perhaps someone here can help solve any problems you might have.

Just in case, I've checked it out for you..

For the iOS version 4.3.4 the mobile Safari version is 5.0.2

There are some 3rd party browsers (iCab, etc) that will "simulate" a desktop browser and access sites - but if it's a Web app that needs a plug-in, it won't work on any iPad browser.
