It is likely that your hard drive has serious I/O errors which prevented File Vault from encrypting your disk.
I checked the harddrive intensively, first I read in the whole disk using dd

No read errors at all. Then I installed smartmontools to get more detailed information

Besides the load-cycle count nothing points to a problem with the harddisk or its interface. Thus I think we can exclude serious I/O errors. But perhaps there are still other (firmware) incompatibilities.
I searched through the mentioned earlier log files, but there are no more CoreStorage or I/O errors: it remains a mystery.
Is there the possibility to boot up in single-user and/or verbose mode and execute the FileVault control panel actions by hand and without a reboot so that we get a chance to see what's going on in detail?
