I just did the most recent Software update and installed Safari 5.1, but I am still running Snow Leopard. Big mistake. Several websites that are important to me are not working properly. Not happy at all.
How do I uninstall 5.1 and go back to 5.0.5?

What you might want to do is go to google, type in safari 5.0.5 download. That should take you to an apple page, then download that. while that's downloading, delete safari 5.1 by throwing it in to the trash from your applications bar. then, install safari 5.0.5

Runescape game is unplayable with that recent upgrade. It's sooooo slow I cant play it. It's running okay on my macpro, but I haven't had a software update yet. It scares me.
Well, in my case, Safari 5.1 will not load ANY webpages whatsoever. Everything was fine, I installed the 5.1 update, did a reboot, and bang....nothing. Even http://www.apple.com/startpage/ won't load.
Good thing I had Chrome installed so I can look for help.

I was in the middle of doing a liability insurance test, and that won't load.
And I have a client who a project colaberation site by Basecamp, and that won't load either.
Not good.
Well, all of the sites that claim to have 5.0.5 redirect you to 5.1, so that is not an option. I am on with AppleCare right now.
There is nothing wrong with Safari 5.1. Something is wrong with your configuration. The problem calls for troubleshooting, not reversion. If interested, post back.
I will give it a whirl. I just reinstalled 5.1. The first warning was that the version of my browser does not support Community Toolbox. I am not even sure what that is, or if it is relevent.
I am trying to use a basecamp collaberation site, and the content appears like code.
Other sites seem to be painfully slow, although that could be because basecamp is struggling?
Can you post a link to one of the sites you're having problems with? If I can't load it either, that will tell us something.

Thats exactly whats going with me since yestrday when I inst. 5.1
That takes me to a login page, which is as far as I can get. The login page itself looks fine.
Most problems like yours are caused by third-party modifications to Safari or the OS. To bypass those temporarily, please boot in safe mode and test. Flash and some other things won't work in safe mode.
I am in safe mode, and stil having the same issue with basecamp.
I just sent a bug report to Apple.
