Why is it that when I open up a Word 2011 document, it opens up multiple previous word documents. How do I change this?

I could say your mac is cursed. The lion curse is that it re-opens all windows that were previously open, plus the new document you wanted.
The workaround is to close files before you quit, command-W (command-W, command-W...) then command-Q
It's not a curse...
Open SysPrefs > General and unselect the option to "restore windows when quitting and re-opening apps." This should solve the problem.
