How do I use Versions

I opened a document in Pages after upgrading to Lion. I then clicked on the red button to exit Pages expecting that my changes would not be saved or that I woudl be given this option. When I again opened this document I found that the changes I did not want were in the document. How to I find the original Pages document? Can I turn the versions feature off for certain documents?
