By default the "Automatic Graphics Switching" is used to maximize battery life.

So unless anything 'graphics intensive' comes up then the Intel 3000 is used and the AMD 'sleeps'.

You can change the automatic switching in the Energy Saver Preferences http://support.apple.com/kb/HT4110

When choosing to always use the SMD then the System Profiler should show it.

I33tc0der... When running under Windows, only the AMD GPU is used.

To make things worse I don't have Intel graphics card (My "other" graphic card is AMD) so I guess i can't use the utility "gfxcardstatus".

All 2011 MacBooks/MacBook Pros have an Intel GPU (it's part of the processor... your can't "not" have it). However, it is not available under Windows and it will not show up under that OS. gfxcardstatus is an OS X utility and will allow you to select which GPU you would like to use (or allow normal auto switching)... it will also put an icon in your menubar to let you know which is in use.
