I travel alot and routinely use my Airport Express to create a wireless network in hotels. Can I also establish a second "profile" which would see it as a range extender to my home network?

Yes, you can create and store up to 5 different profiles on the AirPort Express.
That is the upside. The downside is that this a bit tricky to learn...and you have to have AirPort Utility available to be able to change to a different stored profile when you are traveling.

Open AirPort Utility and click Manual Setup
Click the Base Station menu item at the top of computer screen (not the Base Station tab in the center of the window that you are probably looking at)
Click Manage Profiles to see the setup screen
Click the Help menu, also at the top of the screen, and enter Using Profiles in the search box for complete instructions.
Be patient, as this setup is not very intuitive.
