In a couple of weeks I'm heading to the uk and I was planning on buying a uk iPhone 4, I've heard that a uk iPhone 4 can be used in any country! Is this correct?

If purchased officially unlocked yes. Officially unlocked iPhones are sold at Apple stores in the UK.
The iPhone is sold as officially unlocked and as carrier locked in the UK. Either one can be used with a GSM carrier in another country, but if you don't want a contract with a carrier in the UK and don't want to pay international roaming fees with a carrier in another country, request and purchase an officially unlocked iPhone from an Apple retail store or from an official Apple retailer for the iPhone.
Thanks for super fast answer! My idea is to buy an iPhone 4 from the uk apple website and get it posted to australia so I can set up my apps and music, then buy prepaid sim cards for each country I visit, would the iPhone I purchase from the apple site be factory unlocked?
You won't be able to do that. Apple online stores will only deliver to a verified billing address located in the same country that the online store is...I.E.-the Apple online UK store will only deliver to a verified billing address in the UK. You'll have to purchase, in person, at an Apple store.
Again, if officially unlocked, it's unlocked, will work with any supported carrier's sim.
