Now that I have Lion installed, I noticed that it takes considerably longer to start my home screen. It appears that programs are loading at startup that did not load before, i.e. calendar, mail, etc. How do I modify what starts when I launch my home screen?

When you shutdown your machine, there is a prompt with a checkbox. Leaving it checked will restart your system with the same applications open as when you shut it down. If you uncheck the box, your system will start clean. It's not a persistent election though... you'll need to do it each time you shut down.
System Preferences -> Accounts -> Login Items
Check what's in there and remove any that you don't need.
Also, what @JoeyR mentioned is a good suggestion as well.
