It should take just a few minutes on an iPad2 as it only removes the hardware encryption key. Storage size doesn't matter.

The iPad and iPad 2 support hardware encryption, in which case it deletes the encryption key instead of the data itself.
Without the key the data is indecipherable and meaningless.

It does say on that link it varies by iOS device.
It's been almost an hour and this was a barely used 16gb. The people who are here to buy it are freaking out on me because what looks like a progress bar under the apple symbol has nothing in it!
