Best streaming protocol?

I have an old Xserve G5, and I use it happily every day as an AFP and SMB fileserver.

Now I'm using a second server for video streaming (they are connected via gigabit ethernet), but the whole thing is slow and eats a LOT of bandwidth.


I would like to use the Xserve to stream media on my LAN (and maybe with compression and internet support....), but I can't find a decent server software to use.


Here's what I need:

-Video streaming

-Music streaming

-Image Streaming

-Support for running as a service

-Support for IOS devices as well as Macs and PCs (maybe even my PS3? )

-not upnp. I hate this.


I found that air video is cool, but limited. Any suggestion?
