Preview in Lion opening more files than I want.
Why does Preview open not only the file I want but also the last one I opened? I am using Lion on a MacBook Air. How do I get it to stop?

In Lion, by default all apps will now try to start up in the same state they were in when you quit them.
To turn this off, go to System Preferences, General and uncheck the box toward the bottom. ("Restore windows...")
To prevent this from happening with just Preview either close all windows before quitting, or hold option when quitting, or hold shift when launching from the dock.
I hope all that makes sense.

Or, to exclude only Preview permanently from this feature, open a terminal and type:
defaults write com.apple.Preview NSQuitAlwaysKeepsWindows -bool false
To turn it on again type:
defaults write com.apple.Preview NSQuitAlwaysKeepsWindows -bool true
Thanks so much. I was able to do what you said. With the option held down the menu for quitting was Quit and Discard Windows. That's great. Now I just have to remember that. 😀
soehn solved it. That works. Haven't noticed any side-effects yet -- soehn's solution seems to be limited to the Preview, as it should be.
