In my work the iTunes belongs to the forbidden list of software, is there another way to sync without the use of iTunes or there is a portable version (to be able to install into an USB without any trace of it into the laptop)?

iTunes is the only application supported by Apple for syncing.
If iTunes is forbidden by your IT dept, install it on your home computer and sync there.
If you need to sync at work for contacts, calendar, or email, talk to your IT dept about syncing wirelessly via the Exchange server.
