Formating the IPad numbers form

The simple question: How do I format a form so that I can read long field names? It would be convenient not to have to artifically shorten all the names for reasons explained below.

I have long names for columns (in the header row) because they are a list of inventory components. I make different products that use different numbers of those components. I create a form that allows me to add new products to my lookup table listing the amount of components it takes to build that item. In a very similar table, I can enter in the amount I need of various products and the spreadsheet will multiple the amount needed by the amount of components to build each item and add it all up so I get a nice neat list of all amounts of all the components I need.

Some components have long similar names with slight differences, and I would really like to extend the size of those fields so that I can see the whole name on the form that adds new entries to the lookup table.

iPad, iOS 4.3.3
