RAM upgrade, iMac 2010
All the tutorials on apple.com direct me to upgrade my 4gb ram iMac to 6 or 8gb, that is, to use either a 2gb card or a 4gb card. Can I, and if not, why can't I, use a 1gb card and upgrade to 5gb?

First, could you post the Apple site that is telling you to upgrade the RAM to 6-8 GB.
If you want to upgrade your RAM, I would add another 4 GB for a total of 8 GB. Buy a 4 GB Kit. (2- 2 GB modules/dimms).

Hence, my 4 with added either 2 or 4 gb.
Also, I think OWC might be abit out of my range given that I'm posting from Brazil hehe.
The thing is, I just happen to have a spare 1 gb ram card in my drawer and I figured I'd add it to ease the load my VMs cause.
The support article also states this "You can use RAM module sizes of 2 GB or 4 GB in each slot"
Apple recommends using 2GB or 4GB modules in each slot. Be careful using the 1GB module. You can certainly try it, but be prepared to remove it if your System starts acting unusual.
Any particular tip-offs I should look for that something's amiss?
You'll notice general System instability that can happen right away or slowly over time: freezes, spinning ball, applications unexpectedly quiting, updates not completing, etc. If you notice any of those things happening, use the Apple Hardware Test CD that came with the computer, if you have one, to check the RAM. Or, just remove the RAM module you installed and see if the problems go away. Good luck.
