Is there any software available that will restore the bounce button to mail? Is there a way to bounce mail in Apple Mail using OS X 7, and OS X 10.8.3? Will doing a search for restore bounce yield any information? Do you know the answers to these questions?

Are you asking, "How does one use Mac OS X 10.7 Lion's Mail application to bounce a received email?"
If so, the answer is, "You can't. That function does not exist in the version of Mail included with Lion."
Since Bounce was no longer working properly with most of the SPAM spoofing other addresses, it had lost all of the little funtionality it ever had. In Mail for Lion, Apple decided to remove because of that.

That's so sad
Before upgrade to lion it was easy for me to get rid of a lot of unwanted emails (spams/junks) now is a disaster how quickly my Inbox or Junk folder get hundres some time 800+, is so fustrating all the claning i have to do, is there any other way to stop all this for happening or at least some filtering or else that prevent those emails for comeback to my folders? apple please do something about this!!

Well... I think Apple can create an application or something for lion (as i was for Snow), if the bounce option does not longer works or is not available , some way to block or prevent all those unwanted emails. maybe deleting tracking kookies stored on the computer helps?, i have not Idea? Open to any suggestions
Spam is simply a way of life these days. Bouncing spam does absolutely nothing about stopping it... it just sends it back on someone else like you, since spam is usually sent from a hijacked account or spoofed address. And Apple does have something to help you handle it... the junk mail handling in Mail. If you haven't turned it on, go to Mail -> Preferences -> Junk Mail and turn it on. Read Mail's help for more information about how to use it.
If Mail's junk mail filtering isn't adequate for you, try something else, like SpamSieve.

I have no solution, but I *really* miss the bounce feature. I receive a lot of mail that isn't spam, but it's not for me (someone apparently doesn't know what their own email address is). It was nice to just bounce it to make the sender believe that the address wasn't valid. Now I feel guilty if it appears to be an important email and I don't reply to the sender saying "you have the wrong address."
That is what the delete key is for.

No, the delete key is for deleting mail. Notifying the sender that the email address is invalid will make them verify the address with whoever they were trying to email so they can get the email to its intended recipient.
I say bounce is wrong for that purpose.
Either delete it or reply back but bounce tell the user nothing at all.
It is abuse like this that cause it to be removed.

I disagree. If I get a bounce from a mail server, I think "hmm, that email address doesn't appear to work, maybe I should verify it." In my opinion, a bounce was much easier (Command+Shift+B) than a reply to say "you have the wrong address" (like I mentioned in my first post).

Yes you are right, but too much to do, long list for clicking and deleting I'm talking about 100's of spams and junks, it will be nice it you can with just a single click....but defiletely with Snow leopard i never had any issue at all
