Can I encrypt settings on iPad2 or can I disable wifi permanently or remove mail icon from screen?

Employees in our boutiques are given 16 units of iPad2 to show designs of garments o customer, but to avoid export of designs by email or bluetooth I want to restrict there access to email, wifi or bluetooth. Kindly reply as soon as possible. Thanx
