I want to change from DVD installation to the App-Store version.
How do I deinstall in order to sell the DVD version but to keep all my data and folders etc.?

Its hard to say, as you have not mentioned which application you are referring to.
In general, you would just delete the "app", not any folders containing your data.

Alternatively, you could use software like appZapper or CleanApp. But I normally just drag the app to the trash.
