how can I force return (not wrap) within a cell

How can I force a return (not wrap) within a cell - resulting in multiple lines, breaking where I want. In MS Excel, I used Cntrl Enter (if I can remember 😕)

Mac Pro, Mac OS X (10.7.1), Lion

Enter a return character in a cell by pressing option-return.
