Typing "epsilon" in Grapher.app (and other shortcuts)

Hi! I use grapher to format all of my mathematical forumlas for class, and, being a biochemistry student with a minor in physics, and given that I take all my in-class notes on my MBP, I have to type a lot of them. Fast. The alt-codes allow me to type most of the symbols I need, with a few exceptions, the most notable being the Greek letters sigma and epsilon. It's much too time-consuming to use the equation pallete, so a shortcut is essential. I have figured out that typing "sigma" with "Use shortcuts while typing" checked, will produce a lowercase sigma. However, I cannot find a shortcut for epsilon. Typing "epsilon" doesn't work, because grapher just sees the psi and interprets it as "eUser uploaded filelon."


And just for clarity, by epsilon, I do not mean User uploaded file (which is actually capital sigma), but rather User uploaded file. (not sure if those will translate properly to HTML, but nothing's stopping me from trying.)

While that is true, keep in mind that this is for the purpose of realtime note taking, and it is essential for speed that I can both type the symbol in a few keystrokes (or as a short word), and I also need to be able to type English words. Having to activate a menubar item twice is actually more time-consuming than just using the equation palette. There should be a shortcut in grapher that I can use to type an epsilon, just like I can type the word "sigma" to get a sigma.


Given the fact that epsilon naught (the free space permitivity constant) comes up A LOT in both chemistry and physics, the amount of time it takes to make the symbol is going to be a major factor in whether or not I can keep up with lectures.
