How do I reverse all columns and rows?

Convert row 1 to a header row so it is not included in the sort.
Click the Reorganize button.
in the Sort section, choose Column A and Ascending.
All sorts in Numbers sort the rows based on values in one or more columns. You cannot, without special measures, sort a single column.

Slightly modified version for those wanting to keep row 1 as standard one.
Click the tab A to select entire column A
command click cell A1 to unselect row 1
Click the Reorganize button.
in the Sort section,
select the mode "Sort the Selected Range" (I'm not sure of the English wording)
choose Column A and Ascending.
It will sort every rows minus row 1.
