How do I edit the window/pane on the mai folder woindow. (left side bar)?
I want to remove some files from the list, but not delete them.

Drag the Folder to a new location, then go back to the sidebar and secondary click on the folder that you want to remove; Click on "Remove from Sidebar" in the menu that appears.

But what about individual files?

It works for files also. Well, it does for me. I'm running Snow Leopard.
If the remove item doesn't appear in the contextual menu, simply hold down cmd (⌘) and drag the item from the sidebar to the desktop, where it will disappear in a puff of virtual smoke.
The sidebar items are only aliases, so you're not touching the actual files/folders.
