Turn off the startup chime

Killing the infernal BONG on my mid 2011 iMac with 10.7 was easy- hit mute before shutting down. If you have something more-or-less permanently plugged in to the audio-out (headphone) port as I do be aware that you must unplug it, wait a sec for the machine to switch to internal speakers and then hit mute to silence the speakers. This setting will "hold" after plugging something back into the headphone port. There is no reason to go to the output pane of sound preferences because there is no "switch" there- just an indicator telling you whether the machine is sending to internal speakers or the headphone port. The switch is made by plugging something into the headphone port.

There is a System Preference pane called Startup Sound that can control the volume level and even mute the startup bong sound. Works on 10.6.8, don't know if it was updated for 10.7 yet or not.

It's not advised to mute it, as if there is a problem with your machine you won't be able to hear the different sound and understand something is wrong with your machine, so just lower it's volume instead.
