I've bought an used iPad and i'd like to transfer the registration of the product from his profile to mine.
What should we do?

You should go into the settings>general>reset then click Erase All Content and Settings, then you can sync the iPad to your computer with your iTunes account.
Sorry i didnt explain well... I mean the registration on the apple website with my apple account.
I want to see it between my products...

You can try but I'm not certain if you can re register a previously registered device. The warranty only extends from the original date of purchase.

It seems once registered, you can't register to another owner unless the original owner unregister. Which Apple need to fix that problem.
If the product is stolen then at least the owner know who currently have it.
Not so. During a 90 day technical support call regarding a friends iPad Apple noted details of the new owner without any questions!
