It should be obvious from the diminutive size of the Mac mini that it has effectively no upgrade options internally - which is traditionally where video cards are located.
The latest Mac mini the 2011 model, has however a Thunderbolt interface. This supports two 10Gbps data channels which are effectively PCI-E interfaces. It has therefore been proposed that in theory a manufacturer could make an external video card which would connect via Thunderbolt. After all normal internal video cards use PCI-E as the interface bus.
At this point I have not heard of any video cards for Thunderbolt.
If you are finding your current Mac mini is not up to the job, then I suggest your best option is to sell it on eBay and buy the current top model Mac mini with its AMD Radeon HD 6630M chip. Historically it is possible to get quite a good price selling a secondhand Mac.
