How can I delete Airdrop or shut it down? This new program came with the Lion OS X and I don't want other Macs to know I'm around.

Airdrop only becomes active when you click on it in the Finder window.
If you don't want to see it there at all, just right click and chose 'Remove from sidebar'.
If you ever do want to use it, go to Finder > Prefs > Sidebar and check the box next to 'Airdrop'.
As you can see, I have it turned off too.
Unless you highlight it, it is not active. And, unless you activate (highlight) it, have your Wifi turned on, and there is another Mac with Lion within about 30 ft, it cannot be detected.
