i cant get music OFF my iphone with itunes

I cant get some music off my iphone - I am synching with itunes and click OFF the songs I don't want - I've tried it different ways - clicking OFF the actual songs in the itunes library, or clicking them off on the iphone list window where you can "manaully control and manage" music when you synch - No Go.

These songs are un-clicked evrywhere and STILL show up on my iphon. grrr. I hate itunes. Its the most obtuse software ive run into.

iPhone 3GS, iOS 4.3.3
