I'm using Microsoft Office 2011 with my MacBook Air running OS X Lion. Wondering it always opens with the last document I used instead of a blank document/spreadsheet/presentation. Any ideas on why this happens and how to turn if off?

Glad you brought it up. I was going to ask the same question today as it's happening to me also
In System Preferences->General, uncheck:
instead of quitting the application, you should just close it the windows that you don't want to restore the next time you relaunch the app. By close I mean the red X button.
The next relaunch of the application, it should no longer appear.
