can't type in pages

There are two types of Pages documents, word processing & page layout. A blank canvas is a page layout document & it is as it's titled, a completely blank page. You want a blank word processing document.

You have opened a Layout mode template.

Go back and open a Word Processing template.

They are grouped as such in the Sidebar in the Template Chooser.
