is lion server compatible with powerpc macs?

Lion only installs on Intel devices. As a server, however, it will support all devices. As all Mac devices can use afp shares, which is what you have on a server installation, you will be able to share files from your Lion Server to the powerbook, MBP, and mac mini. The Touch's support is limited, usually coming through using iTunes.
It will only install on an Intel Machine with anything better than an Intel Core Duo Processor. Yes, Mac OS X is Officially Bloated on the GUI part of it now. At least you can disable or choose not to use most of the annoying stuff and bloatware that slows down your system (even if it's a core i7 920 system with 12 GB RAM like mine lol).
I'd recommend sticking with Snow Leopard anyway man... I regret upgrading to Lion in all honesty. It's Extremely nice, but definitely needs to be "out there" a bit longer and get some updates from Apple before I'll use it on a production system.
