This is very frustrating. Sometimes I can click and hold with one finger while moving another finger around to highlight large tracts of text, but quite often it just stalls and I have to try different finger positions, or use two hands on extreme far ends of the pad. Sometimes it just doesn't work at all. Sometimes it works fine. Is there some trick to this?

Try the 3 finger drag option. You can mark text by placing the cursor at the begining and dragging 3 fingers to mark the area you want.
Another alternative would be to enable the double tap/hold drag option in System Preferences > Universal Access > Mouse & Trackpad tab > Trackpad options.. > check Dragging.

Click once at the beginning of the text you want to select to place the cursor there, then scroll to the end of the text and hold down the Shift key while you click there. Everything between the two clicks will be selected.
Also if its only text on the page you can click edit select all or use the shortcut. Which shortcuts are usually listed right next to what you have to click.

This is also some good advice but doesn't help in my specific case where I'm trying to copy a few paragraphs out of a newspaper article on a web page where the text I want is surrounded by pictures, ads, navigational controls and other things that I don't need. With a normal computer you can just position your cursor at the beginning of the text you want to copy, then click and hold the left mouse button while moving the cursor across the text you want to copy. Just trying to figure out how to duplicate this reliably with the unipad. I'm sure there must be some way to do this.
It works just fine on web pages, too — but depending on how the page is coded, you may capture additional stuff outside the text block you have in mind (as, for example, on these ASC pages). If you don't want that to happen, you may have to result to the old click, hold the mouse button and drag.
