mail accounts greyed out in settings

My iPhone works fine and gets the mail but I wanted to do some changes in the various Mail settings [4 accounts] - but on going to the Mail/Contacts/Calendars area of Settings those 4 accounts and the Fetch New Data choice are all greyed out - everything else in this area of Settings is fine and all the other Settings are fine == but these Mail settings can't be worked with.

Any thoughts or suggestions? I do have an iPhone 4 and all software is up to date and okay.

MacPro, MBPro, MBAir & Aperture3, Mac OS X (10.6.7), iPad and iPhone4

Settings>General>Restrictions...are yours on? Allow Changes>Accounts>On/Off.

Never changed anything for me : still accounts regularly greyed out and then in the black again.

Very annoying to say the least.
