I was typing a long email and I am new to mac (I have a MacBook Pro) and I tried to copy and instead it cleared all of my text. How do i undo this action and once restored can someone tell me how to copy and paste??

If you haven't done anything in mail since you can try Edit>Undo
If Undo doesn't work try CMD-V in a blank area of the document. You might have cut the text inadvertently.
Windows CNTL-C, CNTL-V and CNTL-X correspond to Mac's CMD-C, CMD-V and CMD-X.
Also, Windows ALT-TAB (SHIFT-ALT-TAB) is somewhat comparable to CMD-TAB (SHIFT-CMD-TAB).
