iTunes is a music organizer and store, it can handle a lot of different formatted music.
However the music sold in the iTunes store comes as AAC, which a lot of third party devices don't quite all support yet.
If your music is ripped into MP3 format using iTunes, you can do what you want, provided the portable player your going to use has software that can run on Mac and interface with the external hardware device.
iTunes is necessary because it has software in it to make the music play on various iPods with their different processors, transfering the file into the format that the iPod processor can use. The music files are not simply transfered to the device like you would a regular USB key, it won't work, iTunes needs to convert the files first.
So whatever other MP3 player will have to have a means to get the mp3 file onto their hardware, drag and drop copying could be possible, some devices take a SD or other media card, as long as the files are in standard MP3 format and the media is formatted MBR with FAT32.
