There are companies making cases and mounts for the iPad just for this sort of purpose. Search the web for something like "iPad kiosk" and you should find a number of options.

sorry for the "late" answer..
the exhibtion is over. we covered the home and power button physically. we left a hole for a curved up paper clip if the ipad gets stucked, to get access to the buttons.
in october, we will use the ipads again in an exhibition. the feature "guided access" in ios 6 seems to solve all our problems. you can disable the buttons there.
for now we disabled the home button via configuration profile: http://zchristopoulos.com/2012/02/how-to-disable-ipad-home-button-kioskstore-dem o-mode/ but you can still power on/off the device and switch between the apps through links in the application. so we have to wait for ios 6 / use the ios 6 beta.

Anyway now if you want to use ibooks, there is now highlight, share, copy etc features cannopt disable..
