I was having the same problem, but with no iPad or iPhone. Just a zombie iTunes that would launch by itself every 15 min or so. After research, found the issue to be the iTunesHelper ap, which launches at boot and is designed to launch iTunes whenever an iPhone or iPad is detected. Must be a bug, but my Macbook swore it was seeing an iPhone or iPad. I've also heard of similar issues with 3rd party keyboards, etc. I believe the culprit was an iPhone emmulator for web design.

Through Activity Monitor, I quit iTunesHelper and have had no problem since.
