Just spent the last two days with the same problem. Apple sent me to ATT to get new sim card. That didn't work. Eventually had to get Apple to give me a new replacement phone with the new sim card to get it to work. They downloaded the iOS 5 at the store. But the insisted on charging me $73 for a replacement phone even though my frozen phone was a replacement phone I had purchased on July 4, 2011 (just past the 90 day warranty). So Apple froze my less than 4 month old iphone4 with the iOS5 and held me hostage without a phone unless I agreed to purchase a new replacement phone. This is the new JobLESS Apple and it *****!
Same sim error after update to iOS 5. Neither the Apple "genius" nor the AT&T reps in store could repair the phone. Obviously the update is bricking phones but Apple still refuses to replace out of warranty devices ruined by this update. This is just wrong!! When an Apple update damages an Apple product the consumer should not be blamed. I hope this is not a glimpse of the new "post-Steve Jobs" Apple. The Apple Store manager said he's turned away many people with the same issue as he snickered. Something needs to be done about this NOW! I hope Apple is listening.
So after my appointment today with another genius bar I was able to get a new iphone 4.
It is currently running 4.3.5 which is perfect by me.
I'm running iTunes 10.4.1.10 and it is not asking me to update my phone when i plug it in.
I will continue to run my iPhone 4 on 4.3.5 with iTunes 10.4.1.10 until the new update is fixed.
I heard that a representative from apple applogized for this error on national tv? I'm not sure if that's true but man this was a nightmare.
Good thing Ted at the Fashion Show Genius Bar was able to help me out!
Only fix seems to be to get a new replacement phone. Since Apple insisted on charging me for a new replacement phone for an error on their part maybe we can get the press to write a story about the latest screw up and how they charge customers for the fix.

So what did you say to get a replacment?
I said this problem happenned after I updated to iOs 5, they also tried in their macs and they couldnt solve it and brought the new one.
btw, I still have warranty, but the person working there told me this, 'you wont be charged' even tough you do not have warranty since it is problem by them. Maybe she doesn't know, or their policies are changing from store to store.
They will probably solve the issue in 48 hours, otherwise I ll finish my iphone experience for good.
I got a phone from Apple Support today, and now I can try to activate the phone again.
Yes, I tried, and it worked. The case is closed, and our last IPhone has now IOS 5.
All we have done is just waiting until Apple has done some updates.

I'm having the same problem at the moment. Im on O2 in the UK and updated my phone on iOS5 release to get the message that you're all having. I took my phone to the apple store and got told that the phone was locked to AT&T (We dont even have AT&T in the UK and I bought it from the O2 store...)
I get the feeling that iOS5 is removing any carrier data and defaulting the phones back to AT&T (the default carrier from production?)
Good times.. I have to go back to the apple store with proof from where I bought the phone. Still using my Nokia N96!

But I just I want to tell you that I also got a new phone and everything was working fine and I had iOs5 too.
But I did restore last n8 after using it for 2 days, and the same problem happenned again.
So, I hope you won't have this but just do not do a restore, probably you ll see the same error again.
There will be new update anyway so Apple has to solve this issue. Just waiting for acouple of more days.
I have had EXACTLY this. iOS5 update. iPhone (3GS) no longer recognises the SIM. I go to the Apple store and they've told me that it's locked as AT&T and the implication was that I have had a phone that is "unofficially unlocked". Would I not have known this sooner considering I've had it for 2 years?
So now I am screwed as I have no proof of purchase as this phone is over 2 years old and I got it from a member of STAFF at O2. She had it given to her through an O2 friends and family package.
More to the point the handset has been replaced TWICE. The second time I had to play £139 for it, and they are still telling me that it's to do with the original purchase. So it might be in line with the theory that this is to do with replacement phones.
So either - I am a liar (which I am not) OR the staff at Apple are implying some sort of underhand behaviour at O2 OR the iOS5 update defaults the carrier - as you said.
You know - no one said "yes this is an issue we are having and we need a proof of purchase to help you out", they just told me that the phone had been bought in America and was locked to AT&T.
Time to pull out a MEGA case of customer service.
Am HOPING that a SIM upgrade works - I'm pretty sure it won't.

Unbelievable stuff from apple, O2, and f#%*ing phone cover insurance O2's incompetent insurance company.
So walked into a O2 shop in Dublin to change the sim card the girl in the shop was very helpful and tried 3 different sim cards but no luck, so she calls apple tech support from her desk and explains the problem to the tech lad,
He then asks to speak to me so I explain the whole thing to him and then he says he will give me a reference number and that I'll have to call again when I'm next to my pc.
So today I call apple again I give them the ref number and then the tech lad transfers me to a senior tech lad.
Which explains me that this happened because my current iPhone provided to me four months ago by phone cover insurance was originally a Vodafone iPhone and the iOS 5 update reset the phone to Vodafone that's why it won't take a O2 sim now so basically the senior techie says to me go f#%ck yourself, this is not apple mistake this is a phone cover mistake call them and sort it out on your own (thank you apple for the ios5)
So I call phone cover and after a few seconds I realise they are a mickey mouse firm the first call the girl just bulshits me before even listening to me then I get angry so she puts me on hold for twenty min in complete silence she didn't even bother activating some elevator music or Christmas songs.. So I give up and call again, different girl this time,
Trying every trick in the book to shake the responsibility of their shoulders but she knows she's in the wrong cause I just spoke to apple and they tracked the phone as a Vodafone reconditioned iPhone, so then she says it's apple fault they gave them the Vodafone so I should contact apple arggggh.. So I tell her I won't they will have to do it so she takes my number and tells me she will contact apple and call me back, guess what I'm still waiting for the call.
I give up.
Upgraded to iOS5 lastnight and I got the Sim error everyone is talking about. I got a replacement phone thru Apple back in July. I have made a trouble ticket with Rogers Wireless. Should I contact Apple too? Rogers stated that it was a known issue but they didn't know when it would be fixed. My new iPhone4S is arriving any day but I have to deal with not having a phone for now. : ( Please Apple, fix ASAP
The same thing happened to me twice. It happened to my iphone 4 in March and Apple gave me a new phone and everything was fine. Then it happened to me last week when trying to install IOS 5. Went to Apple they tried everything and ended up giving me a new phone now everything is fine. I am not upgrading to IOS 5 until I know all the issues have been fixed!
