After upgrading to iOS5, videos that had previously been loaded on my iPad will not load. iTunes returns an error: "the video format is not supported by the iPad"
There have been a lot of changes to my environment:
Moved from Mac OS 10.6.8 to Windows 7 64 bit
iTunes has been upgraded to 10.5.0.142
Upgraded (and I use the term loosely) to iOS5.
iPad 2, Windows 7
More info: Just did a "Restore" from iTunes. Same problem:
"the video format is not supported by the ipad"
I now have an $800 placemat, with a $60 leather cover.

What movies are you trying to watch?
Also, you should try to use the iPad for more things than just movies, there are many neat apps such as Flipboard that for me, replace my computer.

Up until recently I have been a robust user of other applications, in addition to the 9 email accounts I monitor across 7 clients, I also use it for eBooks (Kindle and iBooks), twitter, music study (Amplitube, Guitar ToolKit), brainstorming (MindNode), Productivity(Pages, Numbers) etc.
But the primary use is for videos, professional training videos, music study and documentaries, and even just plain old entertainment (Sons of Anarchy). It's a mixture of handbrake-encoded DVD's that I own, downloaded. training videos (Tableau Software for example), and a few iTunes purchases.
After iOS5, my iPad's primary reason for existence is null.

The iTunes purchases should work on the iPad, not sure why they wouldn't.
Are you using Handbrake to convert into one of these formats?

I found a work-around.
It appears that files dragged directly from an external USB hard drive onto the iPad will not load. iTunes returns the message:
"Watchmen Ultimate Edition.m4v" was not copied because the video format is not supported by the iPad "Tom's iPad"
Now, I've been loading movies on my iPad this way since I got my very first iPad v1. I've done this under both Windows 7 and Mac OS 10, using a variety of hardware. It's always worked.
Late last night I discovered that if I copy the files onto my machines harddrive, then I am able to drag the movies directly onto the iPad to load them. It turns out I can also load these movies into my iTunes library.
I am not sure why things are working this way. As I said in my original post, a lot of my environment has changed:

It's a shame that I now have these extra steps. The reason I prefer to drag directly onto the iPad instead of loading onto my hard drive (or iTunes library) is that I run SSD's on my laptop (for my work), and that storage is expensive, so I can't have extra copies of movies sitting around on my hard drive.
i'm also having trouble with vide on the ipad with iOS 5, my codecs are no longer recognized either.

I just updated to the latest version of ITunes, and now it "doesn't support" the video formats it did an hour ago?
One of mine is a .mov file, and the orher is whatever format is created when you take an iPhone video.
OI never received this warning before for these or any other video files.
After updating to iOS5 I found that when attempting to use content encoded with H.264 at a resolution of 720x480i Main Profile, Level 3.1, AAC-LC 2.0 audio a failure occurs. iTunes reports that the content is not supported when attempting to load. However, if the content is switched to a resolution of 720x480P Main Profile, Level 3.1, AAC-LC 2.0 playback will work.
I purchased 3 TV episodes yesterday, none of them can sync to my iPad 1

This if very frustrating. Upgrading to the New iPad is not an option for me as I can not afford it.
I confirm the problem with ipad2, IOS5, itunes 10.6.3 and osx 10.6.8
