Changing Carriers and moving content

So ditching at&t and moving to Verizon with the 4S, and saving about $15 in the process...

Would be real nice if all my old folders with nested apps, wallpapers, ringtones, music playlists and even voice mails would transfer right over. How best other than just a new sync and resetting all the ringtones, and misc settings to keep everything from my old 3GS (iOS5)?

PS: I've already seen the existing article here on the forums, but it is SPECIFIC to upgrading when you are on the same carrier.
