How do I turn off voice activation?

Hello. Just upgraded from the iPhone 3GS to the iPhone 4S, which I received Friday. This morning I get in the car, press the home button twice to pull up the music player controls, and for whatever reason voice activation turned on. Anyone know how to turn it off? It literaly speaks EVERYTHING to you. Kind of annoying after about a minute.
