Found a solution!!

With the help of http://support.apple.com/kb/HT1766 and http://support.apple.com/kb/HT4946

Confirmed this evening's backup file existed on my Mac and that the option to restore from previous backup would be an option. I had not disconnected my iPhone from my Mac so while still in iTunes, chose RESTORE. A little uneasy to watch the process of restoring first to factory settings (deleting all my info...) yet at the end of that process, was given the option to chose Restore from Most Recent BackUp. WooHoo! My deleted email/calendar account is back in place as is ALL my calendar entries, contacts, apps, etc.

Now to find a way to transfer my calendar entries to a different account...

A second item to note from today's learning experience is to always have a recent backup. A popular myth is that iTunes can only store a single backup for each iGadget it knows. This list you can review in iTunes / Preferences / Devices. However, if you Right-Click or Control-Click on a backup, a popup menu will appear and give you the option to Archive it. Label the thing appropriately (i.e., why) and it won't be updated anymore, iTunes creates a new backup of the corresponding device. And when you do a Restore, if there's more than one backup of the device, iTunes will ask which to use.

Just beware that a backup can be very big, especially on fat iGadgets like a 128GB iPad (worst case)...
