How to get rid of iCloud without loss of data?

Hi,

I'd really appreciate it if someone could help me getting rid of the deamon, without losing the data on my devices:

- iPhone 4,

- MacBook Pro.

After letting iCloud destroy my cal and address book, I wouldn't want it to delete the remainings, to complete it's work.

What steps must one take to keep a copy?
