My new iPhone 4 just came in today but I'm struggling to figure out how to get all my info, apps, settings from my old iPhone onto the new one. Can someone walk me through it? I've already backed up all my data from the old phone to iTunes but can't figure out what to do next.

Photos are kept on your computer, they are not part of the backup. You take photos off your phone you take (in the past) by connecting it to your computer and taking the images off like you would from a camera. The backup in iTunes does not keep items like that in backup.
As for the applications inside iTunes you can just "transfer purchases" and it will install all the items back on your phone. Or go into APPS when connected and you can pick and choose apps you wish to reinstall.
