What will happen if I delete my iCloud account?

It asks you what you want to keep contacts on your iOS device. Your Mail will be gone, as it is residing in icloud and "offline" icloud mail ( without actually using icloud service ) is impossible. You fall back to your pop/imap mail services like yahoo,msn,gmail and so on.

You can backup idevice data and apps and content already now using iTunes as a optional thing( along with using icloud backup together ). But after icloud account has been deleted you can only backup with itunes to Mac/PC of course.

However if you use iOS iwork apps and had them set to save documents in the cloud, all of your office files will be deleted forever . So back up these using itunes or manual download to Mac/PC from icloud.com/iwork before you go on and delete the cloud .

iCloud isn't an app, it's a service that is built into the iOS. If you delete the iCloud account from your device, all you have to do to use it again is go to Settings>iCloud and sign back in with your iCloud ID.
