this is really bugging me now i have been trying since it was released, i plug it in and it says update the first time it took 3 hours to download  then it came up  saying that there was an error while backing up and that i can continue if i want or cancel altogether,so i continue then it comes up saying that it cannot be found please help me this doing my head in

Apps can be downloaded again for free, Downloading past purchases from the App Store, iBookstore, and iTunes Store, the only thing you'll lose are the app settings.

Delete the latest backup in iTunes/Edit/Preferences/Devices.

Make sure your secuirty software settings are correct:

Connect in recovery mode to make iTunes recognize again:
