Before I synced my phone with iOS5, itunes said that my phone was being backed up. However, when iOS5 was done downloading, all my previous purchases were gone. Only my contacts and pictures were kept, how do I get all the music and videos back?

You can download previously purchased apps and music using iTunes in the cloud.
On your computer you would go to the iTunes Store, then Purchased and from there you can download them again free of charge.
On your iOS device just go to the iTunes store, and then Purchased for music and the App Store>Updates>Purchased for apps.

Itunes content is not part of the backup that itunes performs. You should be transferring any purchases from the iphone to the computer - File>Transfer Purchases
