The idea is you use the tablet on the go, and then at a static location, you can pull out the mac mini, which has a dvi and hdmi output. Use a hdmi to connect to the tablet and have the tablet display?

No, you cannot do that. However, there are apps that will
let you use the iPad as a second screen via wireless.
I am guessing this is what you want.

Just to clarify, did you have a specific tablet in mind? Most tablets have a HDMI out, not HDMI in. IOW, you can connect the tablet to the HDMI input of a TV to display the tablet's screen on the TV, but not use the tablet as a monitor, which is what you want to do. If you can find a tablet with an HDMI input, then what you want might be possible. (BTW, not the iPad since the Apple HDMI adapter is HDMI out.)
