I have not had problems before syncing photos from my computer (windows xp operating system) using iTunes until recently (I believe since I updated my iPad to iOS 5). When I sync it just lists empty folders...with no pictures! I have cleared the photo cache folder from my computer, have synced without syncing the photos and then synced again including photos but all I get is empty folders. I do not know what else to do...can anyone help??? Thank you!!

I am having the exact same problem. I found another thread (sorry... don't have the link) that said this was a known issue in IOS 5 and Apple is currently working on a fix. The thread was dated 10/31/2011 (or therabouts). It also suggested that the problem occurs when you try to synch a large number of files at once (it didn't specify what large really means), and suggested synching your library in smaller chunks. I am trying that as I write this and it seems to be working.

Small chunks worked for me.I did 1-2 folders at one go.Time consuming but works.Sometimes it won't work so then I unticked folder, apply changes, ticked again and apply...one of my folder took me 5 times untill was ok.
I have the same problem but doing it on small chunks don't work for me, since every new sync deletes whatever folders were previously added to iPad. Help!
I have seen instances were a second sync did the trick but you have already tried that.
Try a Reset [Hold the Home and Sleep/Wake buttons down together for 10 seconds or so (until the Apple logo appears) and then release] and then try another sync?
Are you unchecking the photos you have already synched? If you are... don't! That will cause them to be removed from the ipad.
Tried re-set too. Didn't work.
It won't sync more than 3 folders at a time, Period.
I did this on 2 phones recently, following the ios 5 upgrade, and it worked like a charm. I dont know if this is your problem, but if it is, this works pretty good. The first link walksyou through the process. The second link is to the piece of software. This is not jailbreaking or anything, just a different way to see what is on your machine.
If you can see whats on your pad, and the pictures are there, then you simply need to follow the steps.
I believe the issue is the file that connects the thumbnails with the acutal pictures is out of sync or corrupter. Removing the files that tie them together forces the ios device to rebuild them fron scratch.
