Please tell me does numbers 'o9 used on the Lion OS employ auto-save?

Yes, if Numbers '09 has been kept updated, it will be Lion-aware and will autosave.

Well how do you turn off the auto-save function? Sometimes I make a formatting or other mistake and wish to retain the original spreadsheet. How do I prevent my mistake from being saved?

Seriously? You mean to tell me that it took up to '09 to figure that customers wanted an auto-save? How shallow of them.

I hope they have it '08 - the version I have.
